Literal translation of this dish is “Rooster in Wine.” Chicken Thighs are Braised in Red Wine with Thyme, Garlic, Chicken Stock, Carrots, Pearl Onions and Celery. The Braising Liquid is reduced, and the Chicken is served over Buttered, Parsley Noodles.

A rich French Bistro dessert that is best described as a combination of chocolate pudding and a rich French Chocolate Truffle.

Why France?

Matt Prentice chose France as our first destination because it is an integral part of his roots. In his first sous chef position, at only 16 years old, Matt worked with a French Chef as they worked together to install them on the menu and he was captivated. While today Matt is truly an American Chef who loves to focus on the bounty and culinary regions of our country, the French roots affected him as well as much of the cooking styles that make up American Cuisine. French Cuisine today has been influenced by Cuisine Minceur, Nouvelle Cuisine and by the creativity of the ever-evolving chefs that hone one of the dining Meccas of the world. For the first stop on our culinary journey, we offer the wonderful and classic dishes Matt grew up with. Bon Appetit!
